Out of Square Walls and How a Template Handles Them

New construction is close to square. Anything with a few decades on it usually is not. Floors settle, framing moves with humidity cycles, and plaster walls were rarely dead flat when they were new. A countertop is a rigid object being fitted to a room that is not.
What out of square looks like in practice
Three separate problems get lumped together. A wall can be out of plumb, leaning slightly in or out over its height. It can be bowed, curving in or out along its length. And two walls can meet at something other than ninety degrees. A kitchen can have all three at once, and a corner that is out by two degrees turns into a visible wedge of gap over a two metre run.
How the template deals with it
A laser template records the wall as it actually is, curve and all, and the layout software generates a back edge that follows it. Physical templates do the same thing more literally, by fitting material into the actual gap. Either way, the resulting piece of stone is not a rectangle, it is a shape with a slightly irregular back edge that happens to match your wall.
Scribing
Scribing is the on site adjustment: grinding material off the back edge so the top sits tight against the wall. Small amounts are routine on almost every install. Large amounts are a problem, because removing material from the back moves the whole top forward, which changes the front overhang and can expose the cabinet fronts.
This is why a template taken against unfinished conditions is expensive. The correction available on site is limited, and past that limit the answer is a remake.
The alternatives when a wall is badly out
A full height backsplash hides a multitude of sins, because the vertical panel is fitted separately and its own scribe can absorb the gap. A shadow gap detail, deliberately leaving a small consistent reveal at the wall and caulking it, is honest and often looks better than a struggling tight fit. Occasionally the right answer is to have the wall skimmed before templating.

Checking before the templater arrives
You can assess the room yourself in about ten minutes and it is worth doing, because knowing in advance changes what you ask for. A long straightedge or a taut string line held against the wall at counter height shows a bow immediately. A spirit level on the cabinet run shows how much shimming has already been done and how much is left. A large builder's square held into each corner shows whether the corners are close to ninety degrees.
None of this is a substitute for the template. It simply means that when the templater says the back wall bows by eight millimetres over two metres, you already know, and the conversation moves straight to what to do about it.
Cabinets are the other variable
Out of square is not only a wall problem. A cabinet run installed against a bowed wall may itself be out of line, either because it was scribed to the wall or because it was shimmed inconsistently. A run that is straight but not parallel to the wall produces a wedge shaped gap that the countertop has to absorb along its back edge.
Where the gap is large, the better fix is often at the cabinet stage rather than the countertop stage. Packing the cabinets off the wall to run true, and filling behind with a scribe strip or the backsplash, moves the problem to a place where it is cheap to correct. Once the stone is cut to follow a bad line, that line is permanent.
The tolerance nobody states
Fabricators generally work to a tolerance measured in a millimetre or two on the piece itself. The room does not have a tolerance. A wall out by ten millimetres over its length is not a defect anybody will repair, it is simply the house.
The consequence is that the stone is fabricated precisely to an imprecise reality, and the tighter the fit is expected to be, the more that imprecision shows. This is exactly why a shadow gap detail, deliberately leaving a consistent three to five millimetre reveal at the wall and caulking it, often looks better than a fit that is tight at one end and open at the other. A consistent deliberate gap reads as a detail. An inconsistent tight fit reads as a mistake.
Older houses specifically
Houses that have been through a century of seasonal movement, and particularly those on sloping sites where settlement has been uneven, accumulate all three problems at once. Plaster walls also tend to be less flat than drywall even when the framing behind them is true.
The practical implication is to build extra time into the schedule rather than extra expectation into the fit. A templater who spends an extra half hour in an old kitchen is doing the job properly, and the resulting top will fit the room it is actually going into. Anyone promising a laser tight fit against a hundred year old plaster wall has not looked at the wall.
Setting expectations with everyone at once
The most useful thing you can do in an out of square kitchen is make sure the templater, the fabricator, the cabinet fitter, and whoever is coordinating all know about it before the template is taken. When only one of them knows, the correction gets made in the wrong place and somebody absorbs a cost they did not price for.
A short conversation at the template visit, with the relevant people either present or copied on the notes afterwards, settles it: this wall bows by this much, we are handling it this way, the back edge will follow the wall and the gap will be caulked, or we are packing the cabinets out and running true. Once that decision is recorded, the install goes the way everyone expects.
